This age-old process called nixtamalization makes it easier for the body to absorb vitamin B3, protein, and other minerals found in grains. An additional benefit of nixtamalization is the ease with which cakes form with just the addition of water.
Blue corn owes its color to the presence of anthocyanins, natural plant pigments that give color to flowers and fruits.
