Potato starch is a fine, white powder obtained from potato tuber sprouts, with thickening properties, which should not be confused with flour, which is made by cooking the whole process of water evaporation and grinding potatoes - with potato flour. Potato starch is the so-called polysaccharide, that is, a complex sugar and acts as the main carbohydrate in human nutrition, it also contains vitamins - C and B6 - mineral salts - iron, calcium, potassium, sodium and magnesium - and a small amount of protein and fiber. Potato starch doesn't dissolve in water, but when combined with a warm liquid it forms a mush, so it's recommended for thickening soups, sauces, and desserts. You can use it to make jelly or pudding yourself, it is also used to make pasta, cakes and bread.
