Amaranth, also known as amaranth, is an annual plant in the amaranth family, which includes about 100 species. It originates from America, where it was known thousands of years before Columbus arrived. The height of amaranth usually ranges from 0.3 to 3 m. The plant is characterized by a lush inflorescence, in colors ranging from green to golden to red, even reaching purple and brown.
For many years, amaranth was underestimated, almost forgotten, until a number of its health-promoting properties were discovered in the 21st century. Many species of amaranth are edible plants, but seeds are eaten in some varieties and young shoots in others.
Amaranth is now used in many households as a kitchen and ornamental plant.
