DESCRIPTION
Italians most often prepare their favorite risotto based on Carnaroli rice, which differs from the more common Arborio rice in that it has a higher starch content, a harder mid-grain, and a longer shape. These characteristics make the typical Italian risotto perfectly creamy, but the rice grains are always "al dente" inside.

PREPARATION PROCEDURE
