Agave nectar has been known for centuries, especially in Mexico, where the largest quantities of this product are still produced today . Indians living in Mexico at the time regularly drank a drink made from fermented agave juice (tequila).
It consists of inulin, fiber and small amounts of minerals - mainly potassium, iron and calcium. Inulin, an alternative to fiber, regulates intestinal peristalsis, prolongs the feeling of fullness and prevents constipation.
Agave syrup is used in place of sugar in many recipes. Vegans substitute honey for it. It can also be used to sweeten hot and cold drinks, pour over waffles and pancakes, and add to muesli, ice cream, quark and cakes.
