Crocus Apricot Jam consists of halves and large chunks of fruit dipped in thick syrup. It is a great addition to toast, cakes and pastries, and white cheese. Their size depends on the weather that year - smaller fruits hold more water and decompose more quickly when cooked. The sugar contained in the jam preserves the natural color of the apricots, emphasizes their intense aroma and preserves the product. A small amount of gluten-free glucose syrup prevents the jam from becoming saccharified.
