Erythrol is an organic chemical used as a sugar substitute. It is found in fruit, wine, cheese and beer and is produced on a larger scale in the safe yeast fermentation process of glycerin. Erythrol is one of the sugar alcohols - polyols , and its most valuable property is its high sweetness (60 - 80% sucrose), with zero caloric value, zero glycemic index and a very low insulin index II = 2. Erytrol is visually a sugar-like, inconspicuous white powder . This unique sweetener is the best sugar substitute, but should be used slightly more than sucrose due to its sweetness. Recommended for tea, coffee, baking, cooking and desserts.
