The highest parts of the mountains are in the western part of Honduras, where coffee is grown at higher elevations, in more temperate climatic conditions, and in cooler temperatures. This causes fruits and grains to ripen more slowly and larger , creating a more desirable flavor profile.
Noticeable sweetness of cane sugar with hints of caramel, cocoa and dark sugar chocolate, delicate peach aftertaste. Full, creamy body and light citrus acidity.
