Xanthan gum is a microbial polysaccharide obtained by fermenting carbohydrates with Xanthomonas campestris bacteria. It is a white or off-white powder or granules known in the food industry as E415. In the drilling industry it is used as a product that increases the viscosity of the mud. However, it is most commonly used in food production as a leavening and stabilizing agent, as well as a thickening agent. It is very commonly used in the manufacture of gluten-free foods. It is very soluble and in the presence of water swells and forms a paste. As a stabilizer, it preserves the taste and structure of food. As a gelling and thickening agent, it is most commonly used in making jams, jellies, sauces and other desserts.
