Coconut sugar is made from the sap of the coconut palm. After harvesting, the juice from the inflorescences is boiled until a light brown syrup is produced, which is heated until it has a fluffy consistency.
Coconut sugar is similar in appearance and taste to cane sugar. It has a caramel and coconut aftertaste. It can be used in baking, desserts and sweetening hot drinks. Coconut blossom sugar's calorific value is similar to that of white sugar and its glycemic index is slightly lower.
