Parsley (Petroselinum) is an annual or biennial herb with a narrow conical root and branching at the base of the shoot. It belongs to the celery family and includes two species, the common and mostly wild parsley, Petroselinum segetum. This vegetable is native to southern and western Europe.
The parsley root is characterized by a high content of flavonoids, mineral salts and essential oils, among other things, while parsley is rich in folic acid, iron, vitamins C and E, beta-carotene, magnesium, calcium, potassium, phosphorus, zinc, copper and manganese.
Parsley should be eaten raw because it loses none of its valuable health-promoting properties.
