Sodium ascorbate is an organic chemical compound, a salt of ascorbic acid and sodium. It is obtained by fermentation and oxidation of glucose. Sodium ascorbate has excellent antioxidant properties and is a chemical reagent. 1 g of pure sodium ascorbate contains about 889 mg of vitamin C and about 111 mg of sodium. It is in the form of a crystalline or granular white powder. Sodium ascorbate is commonly found naturally in vegetables and fruits.
