Locust bean gum, also known as locust bean gum, is the seed ground into a powder of the locust bean beans, i.e. in carob pods - an evergreen tree found in the countries of the Mediterranean basin as well as India and Australia.
Carob contains the highest amount of calcium and potassium, slightly less magnesium and iron, and traces of sodium, nickel, manganese, copper and others. The powder is also a source of fiber, which helps prevent constipation and increases feelings of fullness for longer.
Carob can be used as a sweetener. It is also used in the manufacture of: sweet toppings and icings for cakes, ice cream, dried fruit, glossy chestnuts, chestnut purees and in the manufacture of fruit jams, marmalades and jellies. In addition, carob is an ideal substitute for cocoa and chocolate. It is an excellent ingredient for cakes, breads and other desserts. In addition, locust bean gum can be used as an effective substitute for eggs.
