Pleurotus (Fr.) P. Kumm. better known as oyster mushrooms, is a genus of mushrooms in the oyster mushroom family, most of which are edible species. In Poland, two species are cultivated and offered for sale on a larger scale – the oyster mushroom (Pleurotus ostreatus) and the lemon oyster mushroom (Pleurotus citrinopileatus).
Like most mushrooms, oyster mushrooms are low-calorie foods. For every 100 g of fresh fruit there are 100 g of fresh fruit bodies, between 35 and 50 kcal. In contrast to typical forest mushrooms, which are considered nutritious, oyster mushrooms are endowed with a large content of nutrients and vitamins, which they contain, among others, zinc, magnesium, iron, phosphorus, calcium, potassium, sodium, selenium, B vitamins, vitamin C and 70% digestible protein.
Oyster mushrooms can be used in many ways, including preparing, cooking, frying pork chops, adding them to soups or filling dumplings.
