Milk thistle (Silybum marianum (L.) Gaertner) is a plant from the Mediterranean region of the Asteraceae family. Valued as a vegetable raw material, the milk thistle occurs in Poland as a cultivated plant or in a wild form in meadows and home gardens. Sometimes confused with thistle, milk thistle is characterized by unremarkable purple flowers and mottled white leaves. The main active ingredient for which this unique herb is famous is silymarin, which has a powerful regenerating effect on liver cells. In addition, milk thistle is rich in vitamins B2 and D, tannins, antioxidants and mineral salts: copper, selenium and zinc. Milk thistle seeds can be used to enrich salads, vegetable paste, soups and sauces. They also go well with porridge, bread dough or yoghurt.
