DESCRIPTION
Chickpea flour (chickpeas): It is made in two ways: by grinding its dry, roasted seeds, or by grinding soaked or even slightly fermented seeds (which gives them added value because the protein becomes more digestible).
It can be used as an additive to regular flour in baked goods. It is also suitable for thickening soups and sauces, especially vegetarian ones, and significantly enriches them with protein. It can replace breadcrumbs in cakes or veggie burgers. Essential for traditional dishes such as kofta or flan, it can also add exoticism to pancakes.
