Erythritol is a natural low-calorie sweetener said to belong to the group of polyhydroxy or sugar alcohols. It occurs naturally in fruits such as melons, pears and grapes, as well as corn, seaweed, lichen and red wine. Erythritol has a slightly sweet taste. When consumed, it leaves a slightly cool feeling in the mouth. it has a zero glycemic index, so it does not raise blood glucose levels. 1g of erythritol has only about 0.2 kcal, which is why it is called a "calorie-free sweetener". Of the sweeteners available, this is the lowest calorie option with virtually no nutritional value, making it ideal for calorie control and reduction.
In industry, it is obtained by fermentation, the same process used to make cheese, but instead of milk, fruit is used. Another extraction method is the use of glucose and various types of yeast or glycerol, also using microorganisms, in this case Yarrowia lipolitica.

The advantage of this product is that it does not have a laxative effect, even in large quantities. Erythrol is not metabolized by our body as we do not have an enzyme to break it down in our body. It is almost completely excreted and does not affect the intestinal microflora at all. It can be used as a substitute for traditional sugar, which is very similar in appearance. It is perfect for sweetening coffee, tea, desserts and as an ingredient in cakes. Erythritol, on the other hand, is less sweet, having about 60-70% of the sweetness of sucrose (sugar), which must be taken into account in recipes when replacing these products.
Erythritol has a beneficial effect on our body by acting as an antioxidant and protecting teeth. As an antioxidant, it combines with free radicals and protects our body from their harmful effects. It also has the ability to inhibit the fermentation of sugars that takes place by bacteria of the Streptococcus genus, which can cause tooth decay.
In food, erytrol is increasingly being used to make healthy sweets, jams and candied fruit, chewing gum, and making dietary supplements for people who need to eliminate sugar from their diet. It serves not only as a sweetener, but also as a flavor enhancer, thickener and substance that prevents changes in the consistency, color and taste of the product.

When replacing sugar with erythritol, we should use the ratio: Replace 5g of sugar with about 7g of erythritol.
