Scamorza is a type of cheese from southern Italy, usually made from cow's milk. In the manufacturing process, the curd matures in its own whey for several hours and is acidified by converting lactose into lactic acid. Scamorza cheese is usually formed into a round shape, then tied with string about a third of its length and hung to dry, and is a valuable source of calcium, magnesium, phosphorus, and vitamin D and protein. Its name probably comes from the Italian capa mozza or testa mozzata , which can be translated as "severed head". The taste of this unique delicacy is similar to oscypek. Recommended for bread, salads and casseroles.
