Parsley (Petroselinum) is an annual or biennial herb with a narrow conical root and branching shoots at the base. It belongs to the celery family and includes two species, the common and mostly wild parsley, Petroselinum segetum. This vegetable is native to southern and western Europe.
The parsley root is characterized by a high content of, among other things, flavonoids, mineral salts and essential oils. And parsley is rich in folic acid, iron, vitamins C and E, beta-carotene, magnesium, calcium, potassium, phosphorus, zinc, copper and manganese.
It is worth eating parsley raw, as it does not lose any of its valuable health-promoting properties.
