Eryngia mushrooms also known as king oyster mushrooms, steppe oyster mushrooms or Nicholas oyster mushrooms (Pleurotus eryngii (DC.) Quél) are cultivated in many countries in Europe and Asia and are an edible species of mushroom. They differ from their relatives in the oyster mushroom family by having a larger fruiting body.
King oyster mushrooms are valued for their flavor and health benefits. They can boast, among other things, the content of proteins with exogenous amino acids that our body cannot produce itself, and B vitamins, which can support the immune system and strengthen blood vessels.
In terms of taste, oyster mushrooms are compared to porcini mushrooms. These delicate, exotic mushrooms are perfect as an accompaniment to sauces, scrambled eggs and casseroles. They are also an excellent meat substitute in vegetarian diets.
