Pumpkin is an annual plant of the gourd family, which includes about 20 species. In the wild, it is found in the warm and hot climates of America. Associated with Halloween, this seasonal vegetable is currently grown primarily in the United States. Due to its low calorific value, the pumpkin is recommended for people who lose weight.
The Hokkaido pumpkin (Cucurbita maxima), also called Uchiki Kuri, is a Japanese variant of the giant pumpkin. It is characterized by a smooth skin of a warm shade of orange, differs from the ordinary pumpkin in its more delicate shape, smaller size and sweet, slightly nutty or chestnut-like taste. Hokkaido squash is a rich source of vitamins - vitamins A, B, C, E, and K - and minerals - calcium, potassium, phosphorus, magnesium, iron, and zinc.
Hokkaido squash can be made both salty and sweet. Importantly, it must be boiled briefly and not peeled before cooking, as it is soft and tender and does not affect the taste of the dish in any way.
