Soy sauce is an ingredient without which Japanese cuisine does not exist. It's what salt and pepper is to European cuisine.
It is perfect for meat, fish, vegetable and seaweed dishes. It can be used alone as a dip, e.g. for sushi or sashimi, or in combination with other INGREDIENTS
to be eaten.
A little soy sauce is added to the dish to enhance its flavor and give it a characteristic oriental flavor and a slightly brownish color
When using soy sauce, remember to always add it at the end because of long cooking, the soy sauce completely dominates the entire dish.
