Borscht is a very popular soup in many Central European countries, the basis of which is a decoction of beetroot and bones, sprinkled with beetroot kvass. Usually served with potatoes, dumplings with cabbage and mushrooms or a pie, or as a drink with croquettes, for example, red borscht is a traditional dish served during Christmas Eve dinner. In addition to the undoubted taste, borscht provides, among other things, B vitamins, which are necessary for the proper functioning of the nervous system, which support the immunity of vitamin C, and valuable mineral salts iron and potassium.
