Goat quark is a white goat's milk cheese with a creamy, slightly lumpy consistency. Goat's cheese is distinguished from its cow counterpart by its characteristic tart flavor, which results from the higher proportion of medium-chain fatty acids (such as caproic and caprylic) present in goat's milk and a lower amount of fats and therefore calories contained therein. Goat curd is particularly high in calcium, phosphorus, copper, and vitamins A, B2 , and also contains smaller amounts of vitamins B1 and B5 , manganese, magnesium, potassium, selenium, and iron. Goat cheese goes well with figs, other fruits and vegetables, and is also a good addition to bread.
