Italian is a standard vegetable set that serves as a base for PREPARING soups and broths. This set, which is irreplaceable in Polish cuisine, in addition to its excellent taste and aroma, is also a treasury of vitamins and minerals: a high content of beta-carotene, which supports vision, accelerates wound healing and fights acne. Parsley root is characterized by a high concentration of flavonoids, mineral salts and essential oils. Leeks are a plant rich in vitamins - A, from groups B, C, E and K - and minerals - calcium, iron, magnesium and zinc. Among the nutritional values of onions it is worth mentioning: glucokinin, calcium, phosphorus, sulfur, magnesium and potassium. Celery is one of the lowest calorie vegetables. It contains twice the vitamin C of citrus fruits and is also an excellent source of riboflavin, calcium, vitamin B6, magnesium, phosphorus, potassium, vitamin A and fiber.
