Spelled flour is made from spelled wheat. It's a type of grass. Some classify this plant as a subspecies of common wheat. What does spelled look like? It grows from 90 to 170 cm in height, has elongated narrow ears, the straw is stiff, and the root system is very well developed. Unripe grain turns blue-green. Ripe grains are straw yellow or brown in color. Spelled has been around in Europe since the 2nd century BC. and was one of the most popular grains during the Roman Empire. Initially also grown in Poland, it was gradually replaced by bread grains that gave higher yields and made the grain easier to process. There is currently increased interest in this grain on organic farms. Its nutritional and health value is incomparably higher compared to ordinary wheat. However, this depends on many factors, such as growing area, weather conditions, harvesting technique, fertilization method.
According to scientists, regular consumption of spelled products can have a positive effect on our health. Compared to ordinary wheat flour, this flour is characterized by a higher content of fats (oleic acid and phytosterols), vitamins (including A, PP, B6, D) and micro and macro elements (potassium, magnesium, iron, zinc). Protein from spelled is much easier to digest than that from wheat flour.
Spelled has a positive effect on the circulatory system. It contains phytosterols and fiber, thus helping to lower cholesterol levels. Scientific studies also point to the ability of spelled to lower blood sugar levels. It is also said that the grain has a positive effect on the nervous system, helps concentration, strengthens memory and sensory organs, and delays the aging process. The spelled also has a connection with a rhodanoid nave. According to scientists, this substance acts as a natural antibiotic found in blood, saliva and breast milk. It has strengthening properties, supports the immune system and can prevent inflammation.
