Pumpernickel bread is a type of sourdough, dark bread based on coarse rye flour, often lightly sweetened with honey, molasses, apple or malt extract. The bread is characterized by a warm shade of brown, sometimes reaching a color reminiscent of roasted cocoa. Characteristic of this delicacy with over a hundred years of tradition is the baking of the dough at a low temperature of around one hundred and twenty to one hundred and fifty degrees Celsius for ten to sixteen hours. Pumpernickel probably originated in Westphalia, and its name in 17th-century Germany could be translated as a swear word. Pumpernickel rye bread is a real wealth of fiber, vitamins and mineral salts. Recommended with cheese, cold cuts, smoked fish, vegetables and spreads.
