The swallow, also known as carp or quaki (Brassica napus L. var. napobrassica), is a biennial crop derived from crossing collards and turnips. It does not occur in the wild. It originates from Russia or Scandinavia, where it is still widely cultivated today.
The caloric value of carp is only 40 kcal per 100 g. This underrated, little-used, and little-known vegetable boasts an impressive array of nutritional properties. Swedes are rich in zinc, copper, potassium, calcium, iron, phosphorus, magnesium, sulfur, vitamin A, groups B, C, K, carotene and rutin, among others. Due to its filling fiber content, turnips are recommended for people on a reduction diet.
Swallow can be eaten both cooked and raw. It is well suited as an accompaniment to soups and salads, you can also use it to prepare pancakes or fill it as a potato substitute.
